Turkey with Pumpkin and Nutmeg

Serve: 4 people

  • 400 g boneless turkey breast, cut in cubes
  • 12 1/3 oz pumpkin cut into cubes
  • 4 tablespoons maple syrup
  • 1 sliced onion
  • 1 bay leaf
  • 1 sprig fresh thyme chopped
  • 1/2 ActiFry spoo nutmeg
  • 6 ActiFry spoons cherry jelly or cranberry sauce
  • 10 fl oz low-fat chicken stock
  • 1 ActiFry spoon oil
  • salt and pepper

Preparation

1. Heat the oil in the ActiFry pan. Add the onion, the seasoned turkey pieces and brown for 5 minutes.__ 2. Add the maple syrup and let caramelize. Add the pumpkin and nutmeg. Cook all together for 2 minutes.__ 3. Add the chicken stock and the herbs. Cook for 15 minutes.__ 4. Bind the sauce with the cherry jelly and cook for another 2 minutes. Serve.
