SPINACH AND CHEESE RAVIOLIOS

Serve: 6 people

Ingredients

  • 1 cup chopped spinach
  • 1 cup ricotta cheese
  • 1 pound wheat flour
  • 1 egg for pasta- 1 egg for dipping total 2 eggs
  • water
  • panko bread crumbs
  • parmesan fresh- get it in a chunk at the deli fresh
  • seasonings- some just buythe jar that says itailian..you can add parlsey, garlic- for flavor

Preparation

take spinach and ricotta cheese- add some italain seasoning- parsley-etc mix together- chill in fridge..now take wheat flour(can use gluten free) mix flour, 1 egg and water making a dough- roll out thin but not excessively- split dough in half making two sheets. Take mix out and place in dots making them same amounts apart. place second sheet on top and cut in squares then pick up each and pinch at edges to seal and dip in egg then bread crumbs, and sprinkle with parm and bake- no deep fat frying and can make your own sizes..after bakes add more fresh parm- not jarred. You can use premade frozen but it does not taste the same..and my kids like to make it- you can use kale, or even zuchhinni chopped and add precooked sausage. You can make a dipping sauce by opening a jar of sauce
