- 1 onion
- 2 large ripe tomatoes
- 1 eggplant
- 1 zucchini
- 2 green peppers
- 1 red pepper
- 2 cloves garlic
- 1 ActiFry spoon virgin olive oil
- Salt
Preparation
Dip the tomatoes in boiling water for a few seconds and then remove the skin and cut into cubes. Peel the eggplant and zucchini. Cut all the remaining ingredients (zucchini, eggplant, peppers, garlic) in small pieces. Add the oil to the ActiFry pan and heat for 1 minute. First cook the onion for 7 minutes, then add the peppers, eggplant and zucchini, ending with the tomatoes, for a total of 30 minutes. Set aside for half an hour before serving. Season and add a little sugar if needed, since tomatoes can be a little acidic.
