Ingredients
- 2 aubergine (eggplant), cut in cubes
- 1 small courgette (zucchini), cut in cubes
- 2 carrot, in cubes
- 2 fennel, finely chopped
- 2 tablespoons peas (optional)
- 2 small green pepper, finely chopped
- 2 small red pepper, finely chopped
- 2 onion, coarsely chopped
- 2 tablespoons tomato paste or tomato puree
- 3 1/2 fl oz dry white wine
- 1 ActiFry spoon thyme
- 1 tea cup finely chopped parsley
- 1 ActiFry spoon of olive oil
- 10 fl oz water
Preparation
1. Place the aubergines, courgettes, carrots, fennel, green and red peppers in the ActiFry. Cook for 10 minutes without adding anything.__ 2. Add the oil and continue to cook for 5 minutes. Add the wine and the tomato paste diluted in a glass of water. Add salt, pepper and thyme. Cook for an additional 15 minutes. Add a little extra water at the end if necessary.__ 3. Open the ActiFry, add the chopped parsley and peas and cook for 5 more minutes. Serve.
