Easy Chicken Sausage, Ginger and Spinach

Ingredients

  • 3 cups cooked rice or pasta
  • 1 Tablespoon extra virgin olive oil
  • 6 to 8 oz. smoked mild or sweet chicken sausage (about 3 links 4-inches in length) links, sliced
  • 2 Tablespoons finely chopped red bell pepper
  • 2 Tablespoons finely chopped green bell pepper
  • 2 Tablespoons finely chopped sweet onion
  • 2/3 cup Greek yogurt
  • 1/2 teaspoon honey or agave nectar
  • 1 cup low-sodium chicken broth
  • 1 1/4 cups chopped baby carrots
  • 9 oz. package frozen chopped spinach, thawed, squeezed and drained
  • 1/2 teaspoon freshly ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon finely chopped sage leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup shredded Parmesan cheese
  • 6 oz. cream Havarti cheese, sliced

Preparation

Set aside cooked rice or pasta to be warmed prior to serving. Place oil in T-Fal Actifry. Add remaining ingredients except Parmesan and Havarti cheese (set aside). Close Actifry lid and set timer for 15 minutes. Turn on Actifry. Open lid and sprinkle Parmesan cheese and place Havarti cheese slices evenly over mixed ingredients. Turn off Actifry and close lid. Wait 3 to 5 minutes or until cheese has melted slightly. Serve spoonfuls over warmed rice or pasta. Yields 6 servings.
