Ingredients
- 1 onion, thinly sliced
- 1 fresh red chilli, seeded and thinly sliced (optional)
- 1 clove garlic, finely chopped
- 2 ActiFry spoons sunflower oil
- 2 zucchini, cut diagonally into 3 mm (1/8 in) slices
- 100 g (31/2 oz) snap peas or snow peas, trimmed
- 75 ml (21/2 fl oz) cold water
- 85 g (3 oz) cooked, peeled King or tiger prawns
- 3 spring onions, thinly sliced or chopped
- 1 ActiFry spoon chopped fresh coriander, plus extra to garnish
- 4 tablespoons black bean sauce
Preparation
1. Place the onion, chilli, if using, and garlic in the ActiFry pan, then drizzle the oil over the top. Cook for 5 minutes. 2. Add the courgettes, mangetout and water to the ActiFry. Cook for a further 5 minutes. 3. Add the prawns, spring onions, chopped coriander and black bean sauce. Cook for 3 minutes. Serve with steamed rice or cooked egg noodles. Sprinkle with a little extra chopped coriander, if desired.
