Vegetarian chili

Serve: 4 people

Ingredients

  • 1/2 cup chopped onion
  • 1/2 scoop oil
  • 2 Tablespoons chili powder
  • 2 teaspoons cumin powder
  • 1 teaspoon mashed chipotle in adobo (more if you like it spicy)
  • 2 minced cloves garlic
  • 2 15 ounce cans pinto beans, drained and rinsed
  • 1 15 ounce can corn, drained
  • 2 14.5 ounce cans fire roasted tomatoes
  • Sour cream
  • Shredded cheese
  • Green onions, chopped
  • Cilantro, chopped

Preparation

Place onion in the ActiFry and drizzle with oil. Cook for 5 minutes. Add the chili powder, cumin, chipotle and garlic and cook for 2 minutes. Add the beans, corn and tomatoes and cook for 20 minutes. Serve with toppings of your choice.
