Ingredients
- 1/2 cup chopped onion
- 1/2 scoop oil
- 2 Tablespoons chili powder
- 2 teaspoons cumin powder
- 1 teaspoon mashed chipotle in adobo (more if you like it spicy)
- 2 minced cloves garlic
- 2 15 ounce cans pinto beans, drained and rinsed
- 1 15 ounce can corn, drained
- 2 14.5 ounce cans fire roasted tomatoes
- Sour cream
- Shredded cheese
- Green onions, chopped
- Cilantro, chopped
Preparation
Place onion in the ActiFry and drizzle with oil. Cook for 5 minutes. Add the chili powder, cumin, chipotle and garlic and cook for 2 minutes. Add the beans, corn and tomatoes and cook for 20 minutes. Serve with toppings of your choice.
