Saffron Risotto


Preparation Time: 10 minutes

Cooking Time: 30 minutes

Serve: 2 people


  • 1 oz smoked bacon, diced
  • 1 oz cooked ham diced
  • 7 oz sliced veal fillet
  • 1 pinch saffron
  • 3 1/2 oz fresh tomatoes, peeled
  • 14 fl oz low-fat chicken stock
  • 3 1/2 oz raw arborio risotto rice
  • 1 clove garlic, finely chopped thyme
  • 1 3/4 oz finely chop ped onions
  • salt, pepper


1. Dice the bacon, fry in its own fat for 5 minutes in the ActiFry pan. Remove as soon as its starts to color__ 2. Gently fry the finely chopped onions in the bacon fat, add the rice and brown for 2 minutes.___ 3. Add the tomatoes, cut into a small dice, and the garlic. Pour in the chicken stock and add the thyme and saffron. Mix and cook for 15 minutes. Add another 3 1/2 fl oz water if necessary.__ 4. When the rice begins to increase in volume, add the veal, ham and the bacon. Stir, adjust the seasoning and cook for about 10 additional minutes. Leave to stand for 3 minutes before serving.
