FuQuinoa’s That?

Ingredients

  • 1 Package Mushrooms, cleaned, cut/sliced
  • 1 TBS Olive Oil
  • 1/2 tsp Salt
  • 1 tsp Pepper
  • 8 Oz package Quinoa, cooked
  • 14 Oz Red Kidney Beans, rinsed, drained
  • 2 Eggs, beaten (optional)

Preparation

1) Cook the Quinoa according to package directions; this will take about 15 minutes. Optionally, use chicken stock rather than water when cooking the Quinoa. 2) Add the oil, mushrooms, salt and pepper to the Actifry and run for 5 minutes. 3) Load the Quinoa to the Actifry, run for 10 minutes. 4) Add the kidney beans to the Actifry, run for 3 minutes. 5) Optionally, add the beaten eggs, run for 3 minutes. 6) More options: Add chicken or soy “chik’n” nuggets, left-over sweet potato french fry crispies, green onions Ready to eat or, when cooled, can be bowled up for lunches at the office.
