Creamy Indian Curried Cabbage.....adapted from Marlene Koch, Eat what you love

Ingredients
- Creamy Indian Curried Cabbage when you add the yogurt and a touch of coconut extract, it duplicate the rich taste of coc
- 1 white onion, sliced
- 1½ teaspoons curry powder
- ½ teaspoon salt or less
- 1 pkg of presliced coleslaw mix or 1/2 head cabbage shredded
- ¼ cup water
- 1/4 c plain low fat yogurt
- 1 tsp brown sugar
- 1/4 tsp coconut extract
- 1tbsp oil
Preparation
1. Place oil and onions in actifry. Cook until slightly soft. Approx 4 minutes 2. Add the curry powder and salt and . Add the cabbage and water to the pan. 3. Cook until liquid is evaporated and the cabbage is soft and tender approx 3-5 minutes. Once the cabbage is wilted, remove from heat Place in a bowl and add ¼ cup low-fat plain yogurt, 1 teaspoon brown sugar, and ¼ teaspoon coconut extract. Mix to combine and serve.
