Potato Wedges with Herbs and Spices

Preparation Time: 20 minutes

Cooking Time: 35 minutes

Serve: 4 people

 Ingredients
  • 1 3/4 lb small potatoes, left unpeeled
  • 1/2 ActiFry spoon dried mixed herbs
  • 1/2 ActiFry spoon paprika
  • 3 ActiFry spoons light olive oil
  • 2 ActiFry spoons plain flour
  • Salt and freshly ground black pepper, to taste (optional)

Preparation

1. Cut each potato (leave the skins on) into 4 or 6 even wedges, depending on their size. Rinse the potato wedges thoroughly, drain, then dry them well on a clean tea towel. 2. Place the potato wedges in a large bowl. Add the dried herbs, paprika and 2 ActiFry spoonfuls of oil and toss to mix until the potatoes are well coated. Add the flour and toss to coat well. 3. Place the potato wedges in the ActiFry pan, then drizzle the remaining oil evenly over the wedges. Cook for 35-40 minutes, or until the potato wedges are cooked. 4. Add seasoning to taste, if desired. Serve the potato wedges with a selection of dips.

Toasted Pumpkin Seeds

Preparation Time: 1 minute

Cooking Time: 10 minutes

  • Pumpkin seeds
  • 1 teaspoon of oil
  • a pinch of salt
  • 1 teaspoon of garlic powder (optional)

Preparation

Did you carve your pumpkins? Not sure what to do with the seeds? Here is a great idea……….. toast them in the ActiFry – Add the Pumpkin seeds to the non-stick pan – drizzle a tea spoon of oil – add a pinch of salt – and optional is some garlic powder (just a teaspoon, not too much) – Cook for 10 minutes

World’s Best Wings : Crispy and delicious!

Preparation Time: 5 minutes

Cooking Time: 35 minutes

Serve: 1 person

 Ingredients
  • 10-12 Wings
  • 3 Tbsp Flour
  • 1 tsp cayenne
  • 1 tsp smoke paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cloves garlic (optional)
  • BBQ Sauce (renegade chicken and rib recommended)
  • Hot sauce (franks or sriracha recommended)

Preparation

Put the flour, cayenne, paprika, salt and pepper together in a bowl to make a dredge for the wings. Mix thoroughly. Dredge wings in flour and shake off excess (very important!). Place in actifry gently, to avoid any additional dredge coming off. If you want to add garlic flavour, place cloves in actifry as well. Cook for 35-40 min. Toss in bbq sauce and hot sauce mixture to taste. Crunch through outer skin to succulent meat inside. Repeat.

Kale Chips

Preparation Time: 8 minutes

  • OIL FOR SPRINKLING
  • PAPRIKA
  • COURSE SALT- OPTIONAL

Preparation

TAKE THE KALE CLEAN IT SHRED IT, SPRINKLE IT WITH A BIT OF OLIVE OIL AND A BIT OF PAPRIKA. BAKE UNTIL CRISP ( I USUALLY TAKE THE OLIVE OIL AND MIX WITH PAPRIKA- AND DIP THE KALE LIGHTLY IN THE MIX AND BAKE BUT HAVE DONE IT BOTH WAYS) WHEN STILL HOT SPRINKLE WITH A BIT OF SALT AND MORE PAPRIKA (CAN EVEN ADD TABASCO TO THE OIL AND PAPRIKA MIX BUT BE READY FOR HOT). YOU HAVE TO GET USED TO BUT A LOWFAT HEALTHY ALT

Paprika Fries

Preparation Time: 15 minutes

Cooking Time: 35 minutes

Serve: 4 people

Ingredients

  • 1 ¾ lbs baking potatoes such as Yukon gold
  • ½ ActiFry spoon paprika
  • 2 ActiFry spoons vegetable oil
  • ½ tsp salt (approx.)

Preparation

1. Peel the potatoes and cut into fries of equal thickness, no more than ²⁄3 inch in square thickness recommended. Rinse fries thoroughly in water; drain well. Use a clean kitchen towel to thoroughly dry the fries. 2. Place the fries in a bowl. Toss gently with the paprika and half of the oil to evenly coat the fries. 3. Transfer the fries to the ActiFry pan; drizzle evenly with the remaining oil. Cook for 30 to 40 minutes or until the fries are golden and cooked through, (the cooking time will vary depending on the thickness of the fries and the variety of potato used). Season fries with salt (adjust to taste). Variation: Toss the potatoes with any of your favorite seasoning blends such as Montreal steak spice, Tex Mex seasoning or garlic-herb blend.

Roasted Almonds

Preparation Time: 3 minutes

Cooking Time: 12 minutes

Serve: 10 people

Ingredients

  • 450 grm Natural Almonds
  • Olive oil

Preparation

Grease the pan with the oil. Preheat Actifry for 3 minutes. Add Almonds and roast for 12 minutes

Chick Peas Snack Heaven

Preparation Time: 3 minutes

Cooking Time: 20 minutes

Serve: 2 people

Ingredients

  • 1 can drained chick pea ( garbanzo beans)
  • 1 tabsp of oil of your choice ( I used olive oil)
  • 1 tsp chili powder, or smoked chili powder or flavor of choice
  • 1tsp salt

Preparation

Drain a can of chick peas and rinse under water. Place on several paper towels and dry well. Add to Actifry along with oil, chili powder and salt Roast for 20 minutes.. for crisp outside and soft inside If you want them more nut like continue to cook until they are crisp enough for your particular taste. ENJOY !!

SWEET POTATO TREATS

Preparation Time: 5 minutes

  • 4 SWEET POTATOES CUBED- LEAVE SKIN ON AS LONG AS CLEAN
  • 1 TABLESPOON FRESH CINNAMON
  • 1 TABLESPOON OLIVE OIL

MIX TOGETHER IN BOWL AND BAKE UP TILL CRISPY

Potatoe CHIPS or Potato CRISPS

  • 1 or 2 well scrubbed whole baking potato
  • 1 tabsp olive oil
  • salt to taste

Well have been on a quest to make Potato Chips or Crisps as it is know in other countries… Well it worked.. Slice the potato very very thin. you can peel the potato but I did not . I used a mandolin to get the very thin slices. place them in a large bowl of cold water and rinse and dump the water and add more water.. let the slices soak for at least 30 minutes and if the water gets cloudy empty and add more water.. This leaches away the starch and allows the chips to fry vs steam… after 30 minutes dried slices thoroughly on paper towels then Into the Actifry w the oil… timing is approx depending on size of potato and amount you use.. I did have to stop and rearrange the chips several time so they didn’t bunch up too much as they are very thin.. Once they reach the color you desire.. ..Remove dust w sm amt of Salt and SERVE and ENJOY

Chicken Nuggets Pendleton

Preparation Time: 1 hour

Cooking Time: 14 minutes

Serve: 4 people

Ingredients

  • 1 lb chicken tenders cut 2 inch pieces
  • 1/3 cup grated fresh Parmigiano Regiano
  • 1/4 tsp salt
  • 1/8 tsp paprika
  • 3 tsp Paul Prudhomme Poultry Seasoning or Poultry Seasoning
  • 1/2 cup fine panko
  • 2 whisked eggs
  • 1/3 cup flour
  • 2 tablespoons oil (I used EVOO, Olive oil)

Preparation

Cut up chicken tenders and marinate in Paul Prudhomme Poultry Seasoning in fridge for 2 hours. Grate Parmesan, add salt, add paprika, combine with 1/2 cup panko. Mix well. Break 2 eggs and whisk with a fork. Dry chicken tenders with paper towel and dredge in flour. Then dredge in whisked egg mixture. Dredge in panko, Parmesan, salt, paprika mixture and place on drying rack. Set Actifry to 14 minutes. Add 1/2 chicken panko chicken tenders and cover with 1 tablespoon olive oil. Let nuggets Actifry for 14 minutes or until brown and crispy. Remove and sprinkle with salt, paprika and Prudhomme seasoning. Repeat for second batch which might require a little less time. Place on plate, again sprinkle with seasoning and I added freshly chopped cilantro. Make your sauce, as you like it. Enjoy! AJ Pendleton June 11, 2012
