ActiFry Jerk Chicken

Preparation Time: 2 hours

Cooking Time: 25 minutes

Serve: 4 people

Ingredients

  • 1 scotch bonnet pepper
  • 4 scallions, chopped
  • 3 garlic cloves
  • 3 tbsp fresh ginger
  • 1/2 cup ketchup
  • 2 limes
  • 1/2 cup pineapple or orange juice
  • 2 tsp allspice
  • thyme to taste
  • tumeric to taste
  • salt and pepper to taste
  • 1 whole chicken, cut into pieces

Preparation

1. In a food processor combine scotch bonnet, scallions, garlic, ginger, thyme, tumeric, allspice, ketchup, juice from 2 limes, and pineapple or orange juice. Blend until ingredients are well combined, about 30 seconds. 2. In a large bowl add the chicken and season with salt and pepper. 3. Cover the chicken with the marinate then cover and refrigerate for 1-2 hours. 4. Place mixture in ActiFry. 5. Cook in ActiFry for 15-25 minutes or until juices run clear when meat is pierced with a knife.

Polish Cabbage and Noodles

Preparation Time: 15 minutes

Cooking Time: 45 minutes

Serve: 4 people

Ingredients

  • 1/tbsp butter ( for Flavor )
  • 1tblsp olive oil
  • 1/2 cup yellow onions, peeled and chopped
  • 4 cups cabbage, chopped
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon salt and 1/8 teaspoon pepper
  • 1 (8 ounce) packages egg noodles
  • 1/2 cup lite or fat free sour cream (optional)
  • OPTIONS: Sliced Kielbasa added when Cabbage is added. Directions

Preparation

Melt butter in the pan Add onion and sauté / cook until transparent. Then add 1 tablsp olive oil Add cabbage and sauté/cook till tender but still crisp. ( if using the sliced kielbasa add at this time ) Stir in caraway seeds, salt and pepper. While cooking the cabbage place noodles in salted water in lg pan on the stove and cook as directed on package. Don’t overcook. Drain well. When cabbage is done Stir noodles into cabbage and add sour cream. if you are using.. Another option is to use cottage cheese instead of the sour cream .If you decided to use cottage cheese.. add at this point so minutes so it slightly melts into the mix. Cook 5 minutes longer ( approx time just to heat up the sour cream and the noodles) Then Seve PS. I have also used pre cooked ground meat mixed into this mix for a another option to make this a complete dinner meal.. It is a flexible recipes Use your imagination for creative add ins. This recipe is from “The Frugal Gourmet on Our Immigrant Ancestors” cookbook. It’s a great Polish comfort food, easy to mix and serve, and it’s easy on the pocketbook. .

Actifry Chicken Fajitas

Preparation Time: 10 minutes

Cooking Time: 25 minutes

Serve: 2 people

Ingredients

  • 2 boneless chicken breasts
  • 1 red bell pepper
  • 1 yellow onoin
  • mushrooms
  • mexican seasoning
  • spoon of oil separated
  • flour tortillias
  • salsa,cheese,sour cream

Preparation

slice chicken into strips,mix with Mexican seasoning,cook 8-10 min.with 1/2 the oil,stir half way thru to separate chicken,remove chicken-add vegetables ,drizzle with remaining oil.Cook veggies 10 min.Add chicken back with veggies-cook another 5 min.Put mixture on tortillas and top with salsa,cheese and sour cream.

Honey Baked Chicken

Preparation Time: 20 minutes

Cooking Time: 6 minutes

Serve: 4 people

Ingredients

  • 1 lb chicken tenders
  • 1/4 cup water
  • 1/2 teaspoon red pepper flakes
  • 3 tbsp tamari (aged soy sauce)
  • 2 tbsp honey
  • 2 gloves of garlic, minced
  • 1 tbsp. peeled and grated giner
  • 3/4 cup thingly sliced green onions. Use white part for marinade, keep green part for sprinkling on top when donea0
  • Peanuts, if you want
  • slight spoon of hot oil or grapeseed oil….

Preparation

Roast peanuts (if using) in activfry about 2 minutes or less until you smell them! Meantime, combine water, onion, soy sauce, honey, garlic, ginger. Cut up chicken tenders into bite size pieces, and toss into marinade.(I only marinated for 20 minutes on countertop). Pour entire mixture into actifry and cook for about 6 minutes (watch – sometmes you will need more or less, but sauce will disappear!) When chicken is done, pour over rice. Enjoy!!!

Light Risotto with Oil, Ham and Peas

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Serve: 4 people

Ingredients

  • 1 1/4 cup arborrio rice
  • 1 1/2 oz cooked ham
  • 1 tablespoon extra virgin olive oil
  • 1 cup peas
  • 1/3 cup Parmigiano Reggiano cheese
  • 6 1/2 cups vegetable stock
  • salt to taste

Preparation

Heat the oil for approximately 3 minutes. Add the rice and allow it to toast for 2 minutes, add the ham cut into cubes and brown for a further 2 minutes. Pour in the stock and cook for approximately 15 minutes. At the end of cooking, add the shelled peas, a little oil and parmesan cheese. Serve.

SWEET EASY BREAKFAST HASH

  • 1 CUP SPINACH CHOPPED
  • 1 RED PEPPER CHOPPED
  • 1 GREEN PEPPER CHOPPED
  • 1 TABLESPOON BACON SALT
  • OPTIONAL ONE SWEET ONION CHOPPED- NOT FOR WORKDAYS

Smelts

Preparation Time: 2 hours 30 minutes

Cooking Time: 15 minutes

Ingredients

  • 1 lb smelts (cleaned)
  • Juice of 3 leons
  • 2 Garlic cloves minced
  • Salt & Pepper
  • Flour

Preparation

Thoroughly clean the smelts by removing heads and insides. Run thumb nail along back bone to remove all blood. In bowl add juice, garlic, salt & pepper. Add fish juice mixture. Let marinade in refrigerator for 2 hours. Remove fish from bowl coat with flour. Place fish in Actifry. Served here with baked potato and carrots Cook 15 minutes.

Heerlijk Tandoori

k heb 101 recepten met de actifri bv maak wat klein gesneden kipfilet aan met tadoorikruiden(silvo)en een kopje griekse yoghurt even marineren, snijd uitje en paprika en champions tot kleine reepjes.de groentjes 5 min in de actifry daarnaa de kip met kruiden erbij 17 min lekker laten fryen , eruit halen met wat cocosmelk afblussen heelijk bij rijst, en komkommersalade.

Crispy Paprika Chicken

Preparation Time: 5 minutes

Ingredients

  • Chicken drumsticks 8
  • 1 onion
  • Garlic 1 clove or lazy garlic 1 tsp
  • 1 chilli or lazy chilli i tsp
  • chickpeas
  • tinned tomatoes
  • Paprika ( to your own taste ) i used 1 tsp
  • salt and pepper

Preparation

cook drumsticks in own fat for 30 mins. Then add chopped onion, garlic , chilli and cook for 2-3 mins add tomatoes , chickpeas , paprika , salt and pepper , fill the empty tomato tin with water and add. Quick stir and cook for 10 mins. Check seasoning add more if needed and cook for 5 more minutes. served with salad or potato’s
