Salmon Filets with Pesto Sauce

  • Fresh salmon fillet,
  • Some pesto sauce
  • Crumbs on top if preferred

Preparation

Just spread some pesto on top of the salmon fillet, if you like it crunchy sprinkle breadcrumbs on it, I put it in tinfoil to retain the juice ( you may want to remove the paddle) Only need 5 mins cooking time, or slightly longer to get the topping crispy

East Coast Clam Chowder

Preparation Time: 15 minutes

Cooking Time: 45 minutes

Serve: 2 people

Ingredients

  • 125 g large shelled, deveined, headless prawns
  • 1 can of 2 3/4 oz whole small crabs, drained
  • 1 can of 3 1/2 oz salmon, drained and cut into large pieces
  • 1 3/4 oz peeled, diced potatoes
  • 1 1/2 oz onions and celery, cut into small pieces
  • 1 1/2 oz canned sweetcorn, drained
  • 1/2 ActiFry spoon corn flour (cornstarch)
  • chopped fresh parsley
  • 1 clove garlic, finely chopped
  • 7 fl oz low-salt chicken stock
  • 16 fl oz milk
  • salt, pepper
  • chili sauce
  • 1 ActiFry spoon vegetable oil

Preparation

1. Put the potatoes, onion, celery and garlic in the ActiFry. Pour the oil over them evenly. Cook for 5 minutes. Add the chicken stock and 200 ml/7 fl oz of the milk. Cook for 25 minutes.__ 2. Whisk the remaining milk with the corn flour until smooth and pour into the ActiFry. Cook for 10 minutes or until the soup is thick and the potatoes are tender when poked with a fork.__ 3. Add the prawns, clams, salmon and corn; cook for another 5 minutes, or until the prawns are transparent and the other seafood hot. Season with salt, pepper and chilli sauce to taste. Decorate with a little parsley.

Just Like Mama’s Speghetti Sauce

Preparation Time: 20 minutes

Cooking Time: 50 minutes

 Ingredients
  • 1/2 pound cooked ground beef
  • 2 24 once Canned diced tomato’s ( oregano, garlic and romary flavor)
  • 1 Can tomato paste
  • 1/2 Oinion
  • 1/2 Green pepper
  • 1 box precut mushrooms
  • 1 tablespoon sugar
  • 1/2 cup Cinlentro
  • Shreeded cheese to garnish
  • 1/2 tablespoon olive oil

Preparation

1. Add oinion, green pepper and olive oil to your actifry machine, set timer for 8 minutes. 2. Add mushrooms and about a tablespoon of water to moisten and cook for an additional 5 minutes 3. Add the rest of the ingredients and set timer for 20 minutes. 4. Add to your favorite pasta shape, it is a pretty thick sauce but YUMMY!!!

Saucy Chicken with Pineapple

Preparation Time: 15 minutes

  • 1 lb boneless, skinless chicken breast, sliced into thin strips
  • 2 ActiFry spoons cornstarch, divided
  • 1/2 tsp each salt and pepper
  • 2 ActiFry spoons vegetable oil
  • 1 can (15.5oz) pineapple chunks, drained (reserve juice)
  • 2 ActiFry spoons reserved pineapple juice
  • 1/2 ActiFry spoon ground ginger
  • 1/2 ActiFry spoon mild curry powder
  • 2 ActiFry spoons reduced-sodium soy sauce
  • 1 cup cold water
  • 1 ActiFry spoon lightly packed brown sugar

Preparation

Toss the chicken strips with half of the cornstarch, salt and pepper. Transfer the chicken to the ActiFry pan. Drizzle evenly with the oil. Cook for 5 minutes. Stir pineapple chunks with the ginger, curry powder, soy sauce and remaining salt and pepper until combined. Add pineapple mixture to the ActiFry pan. Let stand, covered, in the ActiFry for 5 minutes to marinate. Whisk the water, remaining cornstarch, brown sugar and reserved pineapple juice until combined. Add to the ActiFry pan. Cook for 10 minutes or until chicken is tender and cooked through.

Braised Fish with Tomatoes and Fennel

Preparation Time: 15 minutes

Ingredients

  • 1 lb 2 oz fish (a mixture of salmon and angler-fish) (substitute Monkfish for Angler fish if needed)
  • 1/4 peeled cucumber
  • 1/2 fennel cut into small dice chives
  • 2 tomatoes
  • 2 lemons
  • chopped fresh parsley
  • 2fl oz fish stock or fumet
  • 2 fl oz low-fat whipping cream
  • 1 ActiFry spoon of olive oil
  • salt and freshly ground pepper

Preparation

.1 Cut the fish into a dice with a sharp knife, sprinkle with lemon juice and marinate while you dice the fennel and tomatoes. Cut the cucumber into half slices. Chop the chives and parsley.__ 2. Put the fish in the ActiFry, add a good quantity of pepper and sprinkle with salt. Add the cucumber, chives, fennel, tomatoes and the juice of the other lemon. Sprinkle with a spoonful of olive oil. Cook for 15 minutes.__ 3. Add the fish stock and the cream. Cook for another 15 minutes. Top with parsley for decoration.

Lamb Savoury Bites

Preparation Time: 5 minutes

Cooking Time: 15 minutes

 Ingredients
  • 1kg lamb back strap cubed
  • 2 medium onions cubed.
  • 2 medium red or green capsicums cubed
  • juice of one lemon
  • salt, pepper to taste and a generous sprinkling of dry oregano
  • 1 spoon of oil
  • 2 tablespoons red wine

Preparation

Mix all ingredients. Marinate for 20 minutes. Cook for 15 minutes using the paddle. Serve on warm pita bread with a generous side of rocket drizzled with balsamic vinegar and olive oil.

New Potatoes with Garlic, Tomatoes and Shrimp

Preparation Time: 8 minutes

Cooking Time: 35 minutes

  • 1 lb 12 oz small new potatoes, unpeeled
  • 4 peeled, seeded and chopped tomatoes
  • 12 raw prawns or large shrimp, peeled
  • 2 ActiFry spoons of finely chopped parsley or fresh Provence herbs
  • 2 heads garlic
  • 1.5 ActiFry spoons of olive oil
  • salt and freshly ground pepper for seasoning

Preparation

1. Wash and dry the potatoes. Put them in the ActiFry pan. Separate the garlic cloves without removing the peel. Wash and dry them. Add them to the ActiFry. Pour a few drops of oil on the potatoes and the garlic. Cook for 20 minutes.__ 2 Add the tomatoes to the ActiFry and cook for an additional 10 minutes. Add the prawns and the spices. Cook for 5 minutes or the time needed to cook the prawns. Add the herbs and serve with a green salad.

Talipia with Broccoli

  • 1 talipia fish

I Added fresh broccoli to the active fry A drizzle of light soy sauce , You can use frozen if you like Butit may take a little longer to cook cooked for two to three minutes until nice and hot then I tossed in one chopped tilapia I removed the blade and left the items flat on the inside and tossed around after a few minutes so the fish could get a nice golden color very easy and tasty dish very good if you’re trying to watch your calorie intake also . This is one serving double the size if you are cooking for two.

Chicken Biryani

Preparation Time: 10 minutes

  • 1 Actifryer spoonful Veg Oil
  • 1 Cup chopped yellow onion
  • 2 Cloves garlic, minced
  • 1 Tsp Ginger Powder
  • 1 Tsp Salt
  • 1 Tsp Cumin
  • 1 Tsp Coriander
  • 1/2 Tsp Chili powder
  • 8 Oz Chopped Tomato
  • 1 Sm Container Plain Yogurt
  • 1 Lb Chicken breast, cut into 3/4″ cubes
  • 1 Cup basmati rice
  • 2 Cups chicken stock
  • 1 Tbsp Ghee

Preparation

First, prepare Basmati rice (1 Cup rice into 2 cups boiling chicken stock, 1 Tbsp Ghee), set aside. Heat the spoonful oil in Acti-Fryer, cook chicken until the cubes are lightly browned (and cooked through). Add the rest of the ingredients, cook for 8-10 minutes (until everything is hot). Scoop chicken and sauce over rice, et viola!

Shrimp & Feta Pasta

Preparation Time: 10 minutes

 Ingredients
  • 2 cloves garlic, finely chopped
  • 1/2 spoon olive oil
  • 1 (14.5 oz) can crushed fire roasted tomatoes
  • 1 (14.5 oz) can diced fire roasted tomatoes
  • 1 lb peeled shrimp, 31-40 per pound

Preparation

1. Place chopped garlic in the ActiFry pan, then drizzle with oil and cook for 5 minutes or until fragrant.___ 2. Add the crushed and diced tomatoes and cook for about 25 minutes, or until the sauce is thick, stopping to stir once after 10 minutes with a wooden spoon or spatula.___ 3. Add the shrimp and cook until pink, about 5- 10 minutes, stirring once. Add the feta and stir with a wooden spoon. Serve on top of pasta. Garnish with fresh dill sprigs, if desired.
