Beef Sirloin Stroganoff with Buttered Parsley & Lemon Noodles

Ingredients

  • 1 (12 oz) package cooked beef sirloin tips in gravy
  • 1 can golden mushroom condenced soup
  • 6 ounces sliced white mushrooms
  • 1 small red bell pepper, seeded and chopped
  • 1/2 white onion, chopped
  • 1 pound cooked wide egg noodles
  • 2 tablespoons melted butter
  • 2 tablespoons freshly chopped parsley
  • 1 teaspoon freshly grated lemon zest

Preparation

Place beef tips, condenced soup, mushrooms, bell pepper and onion in ActiFry. Cook 20 minutes. Mix together melted butter, parsley and lemon zest and pour over warm, cooked noodles; toss well to coat. Transfer noodles to a large heated serving platter and top with beef stroganoff.

ActiFry Jerk Chicken

Preparation Time: 2 hours

Cooking Time: 25 minutes

Serve: 4 people

Ingredients

  • 1 scotch bonnet pepper
  • 4 scallions, chopped
  • 3 garlic cloves
  • 3 tbsp fresh ginger
  • 1/2 cup ketchup
  • 2 limes
  • 1/2 cup pineapple or orange juice
  • 2 tsp allspice
  • thyme to taste
  • tumeric to taste
  • salt and pepper to taste
  • 1 whole chicken, cut into pieces

Preparation

1. In a food processor combine scotch bonnet, scallions, garlic, ginger, thyme, tumeric, allspice, ketchup, juice from 2 limes, and pineapple or orange juice. Blend until ingredients are well combined, about 30 seconds. 2. In a large bowl add the chicken and season with salt and pepper. 3. Cover the chicken with the marinate then cover and refrigerate for 1-2 hours. 4. Place mixture in ActiFry. 5. Cook in ActiFry for 15-25 minutes or until juices run clear when meat is pierced with a knife.

Honey Baked Chicken

Preparation Time: 20 minutes

Cooking Time: 6 minutes

Serve: 4 people

Ingredients

  • 1 lb chicken tenders
  • 1/4 cup water
  • 1/2 teaspoon red pepper flakes
  • 3 tbsp tamari (aged soy sauce)
  • 2 tbsp honey
  • 2 gloves of garlic, minced
  • 1 tbsp. peeled and grated giner
  • 3/4 cup thingly sliced green onions. Use white part for marinade, keep green part for sprinkling on top when donea0
  • Peanuts, if you want
  • slight spoon of hot oil or grapeseed oil….

Preparation

Roast peanuts (if using) in activfry about 2 minutes or less until you smell them! Meantime, combine water, onion, soy sauce, honey, garlic, ginger. Cut up chicken tenders into bite size pieces, and toss into marinade.(I only marinated for 20 minutes on countertop). Pour entire mixture into actifry and cook for about 6 minutes (watch – sometimes you will need more or less, but sauce will disappear!) When chicken is done, pour over rice. Enjoy!!!

Polish Cabbage and Noodles

Preparation Time: 15 minutes

Ingredients

  • 1/tbsp butter ( for Flavor )
  • 1/tbsp olive oil
  • 1/2 cup yellow onions, peeled and chopped
  • 4 cups cabbage, chopped
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon salt and 1/8 teaspoon pepper
  • 1 (8 ounce) packages egg noodles
  • 1/2 cup lite or fat free sour cream (optional)
  • OPTIONS: Sliced Kielbasa added when Cabbage is added. Directions

Preparation

Melt butter in the pan Add onion and sauté / cook until transparent. Then add 1 table olive oil Add cabbage and sauté/cook till tender but still crisp. ( if using the sliced kielbasa add at this time ) Stir in caraway seeds, salt and pepper. While cooking the cabbage place noodles in salted water in lg pan on the stove and cook as directed on package. Don’t overcook. Drain well. When cabbage is done Stir noodles into cabbage and add sour cream. if you are using.. Another option is to use cottage cheese instead of the sour cream .If you decided to use cottage cheese.. add at this point so minutes so it slightly melts into the mix. Cook 5 minutes longer ( approx time just to heat up the sour cream and the noodles) Then Seve PS. I have also used pre cooked ground meat mixed into this mix for a another option to make this a complete dinner meal.. It is a flexible recipes Use your imagination for creative add ins. This recipe is from “The Frugal Gourmet on Our Immigrant Ancestors” cookbook. Its a great Polish comfort food, easy to mix and serve, and its easy on the pocketbook. .

Madagascan Beef Tenderloin

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Serve: 4 people

Ingredients

  • 1 lb beef tenderloin steak, cubed
  • 1 ActiFry spoon cornstarch, divided
  • 1/2 teaspoon each salt and pepper (approx.)
  • 1 ActiFry spoon grapeseed oil, divided
  • 1 lb new baby potatoes, quartered or cut into bite-sized pieces if large
  • 2 cups seeded, chopped tomatoes
  • 1 onion, thinly sliced
  • 1 1/3 cup beef broth
  • 1 ActiFry spoon tomato paste
  • 2 cloves garlic, minced
  • 1 ActiFry spoon minced fresh ginger root
  • 3 1/4 cups baby arugula or spinach leaves

Preparation

Toss the beef cubes with half of the cornstarch, the salt and pepper. Place the beef in the ActiFry pan. Drizzle evenly with half of the oil. Cook for 8 minutes or until browned. Transfer the beef to a bowl; reserve. Add the remaining oil, potatoes, tomatoes, onion, broth, tomato paste and garlic to the ActiFry pan. Cook for 40 minutes. Whisk the remaining cornstarch with enough water to make a smooth paste; stir into the stew and cook for 5 minutes. Add the reserved beef, any accumulated juices and ginger; cook for 5 minutes or until beef is warmed through and potatoes are fork tender. Stir in the arugula. Adjust seasoning with additional salt and pepper if necessary.

Vegetarian Chili

Preparation Time: 10 minutes

Ingredients

  • 1/2 cup chopped onion
  • 1/2 scoop oil
  • 2 Tablespoons chili powder
  • 2 teaspoons cumin powder
  • 1 teaspoon mashed chipotle in adobo (more if you like it spicy)
  • 2 minced cloves garlic
  • 2 15 ounce cans pinto beans, drained and rinsed
  • 1 15 ounce can corn, drained
  • 2 14.5 ounce cans fire roasted tomatoes
  • Sour cream
  • Shredded cheese
  • Green onions, chopped
  • Cilantro, chopped

Preparation

Place onion in the ActiFry and drizzle with oil. Cook for 5 minutes. Add the chili powder, cumin, chipotle and garlic and cook for 2 minutes. Add the beans, corn and tomatoes and cook for 20 minutes. Serve with toppings of your choice.

Easy Chicken Sausage, Ginger and Spinach

Preparation Time: 10 minutes

Ingredients

  • 3 cups cooked rice or pasta
  • 1 Tablespoon extra virgin olive oil
  • 6 to 8 oz. smoked mild or sweet chicken sausage (about 3 links 4-inches in length) links, sliced
  • 2 Tablespoons finely chopped red bell pepper
  • 2 Tablespoons finely chopped green bell pepper
  • 2 Tablespoons finely chopped sweet onion
  • 2/3 cup Greek yogurt
  • 1/2 teaspoon honey or agave nectar
  • 1 cup low-sodium chicken broth
  • 1 1/4 cups chopped baby carrots
  • 9 oz. package frozen chopped spinach, thawed, squeezed and drained
  • 1/2 teaspoon freshly ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon finely chopped sage leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup shredded Parmesan cheese
  • 6 oz. cream Havarti cheese, sliced

Preparation

Set aside cooked rice or pasta to be warmed prior to serving. Place oil in T-Fal Actifry. Add remaining ingredients except Parmesan and Havarti cheese (set aside). Close Actifry lid and set timer for 15 minutes. Turn on Actifry. Open lid and sprinkle Parmesan cheese and place Havarti cheese slices evenly over mixed ingredients. Turn off Actifry and close lid. Wait 3 to 5 minutes or until cheese has melted slightly. Serve spoonfuls over warmed rice or pasta. Yields 6 servings.

SWEET EASY BREAKFAST HASH

Spicy Chicken Drumsticks and Fennel Salad

  • 1 kg skinless chicken drums-ticks
  • wine vinegar
  • Tabasco sauce
  • salt
  • 1 ActiFry spoon olive oil
  • 1 bulb fresh fennel
  • 1 apple
  • 5 1/4 oz celery
  • 3 oz green olives
  • juice of 1 lemon
  • crushed peppercorns
  • 2 ActiFry spoons olive oil

Preparation

FOR THE DRUMSTICKS:__ 1. Sprinkle the drumsticks with wine vinegar, Tabasco sauce and salt. Marinate overnight in the refrigerator.___ 2. Put 1 spoonful of oil in the ActiFry and heat. When the oil is very hot, add the drumsticks and cook for 15 minutes until brown.__ FOR THE SALAD: ___ 1. Wash the fennel, apple and celery, peel and cut into thin slices. Mix the lemon juice and oil together in a small bowl. 2. Pour over the dressing and garnish the salad with olives. Serve it with the hot chicken drumsticks.
